Odd Centers to Perfect Dragées

Given the physics of the panning bowl, the ideal center to coat is a smooth, dry sphere that is non-pliable and doesn’t get sticky when tumbling.

However, life is hardly that perfect. A majority of the centers that we pan are either too small or too large, warped, soft, greasy, and have ridges that make the panning process challenging.

The goal of our Panning Dragées program is not to avoid them, but to learn the professional tips and tricks to handle these items with ease. So that no matter how imperfect your center is, your dragee will come out looking like a perfect beauty everytime!
